With him he brought something more valuable than his courage or his spirit of adventure: the finest coffee beans he had ever grown in the mountains of his country. Fate led him to El Salvador, where he found, in the humid climate and the shade of the enormous trees bordering the Santa Ana volcano, the perfect place to start a new life.<\/p>\n\n<p>Finca La Reforma, as he named his new home, was not just a coffee plantation. For Rafael, every coffee bush was a challenge, a project demanding patience, effort and vision. Over the years, the estate became a unique place, where tradition intertwined with innovation. Over more than a century, and from generation to generation, Rafael\u2019s descendants would follow in his footsteps, proudly upholding the essence of his legacy, whilst also perfecting the details that made La Reforma one of the most respected estates in the country.<\/p>\n<p>Times changed, but the love of coffee remained intact. Today, more than a hundred years later, Rafael\u2019s grandchildren, great-grandchildren and great-great-grandchildren continue to run the estate, managing not only La Reforma, but also several nearby estates and the El Borboll\u00f3n wet mill, a facility that has become the heart of the production process. The cherries, hand-picked by a team of expert harvesters, are selected with the same care with which a jeweller selects precious stones. Only the ripe cherries\u2014those that have reached the perfect point of sweetness and flavour\u2014are picked to begin the journey to El Borboll\u00f3n. There, the process begins with the flotation of the cherries, separating them according to their density. Those that sink are the best; those that float\u2014having not reached the necessary ripeness\u2014are discarded.<\/p>\n<p>At El Borboll\u00f3n, the selected cherries are placed on raised drying beds, where they remain for around 20 days. During this time, the cool mountain air and the shade of the coffee trees help maintain the ideal temperature for the bean to develop its most complex and flavourful characteristics. It is a process that brooks no haste. La Reforma coffee is dried slowly, as if the earth itself wanted to ensure that every bean reached its full potential.<\/p>\n<p>The carefully chosen shade trees play a crucial role in this entire process.
