Fate led him to El Salvador, where he found, in the humid climate and the shade of the enormous trees bordering the Santa Ana volcano, the perfect place to start a new life.

Finca La Reforma, as he named his new home, was not just a coffee plantation. For Rafael, every coffee bush was a challenge, a project demanding patience, effort and vision. Over the years, the estate became a unique place, where tradition intertwined with innovation. Over more than a century, and from generation to generation, Rafael’s descendants would follow in his footsteps, proudly upholding the essence of his legacy, whilst also perfecting the details that made La Reforma one of the most respected estates in the country.

Times changed, but the love of coffee remained intact. Today, more than a hundred years later, Rafael’s grandchildren, great-grandchildren and great-great-grandchildren continue to run the estate, managing not only La Reforma, but also several nearby estates and the El Borbollón wet mill, a facility that has become the heart of the production process. From there, La Reforma’s coffee travels the world, bearing the seal of quality of a family that has dedicated its life to improving and preserving its heritage.


The process followed by La Reforma coffee is meticulous, almost an art form. The cherries, hand-picked by a team of expert harvesters, are selected with the same care with which a jeweller selects precious stones. Only the ripe cherries—those that have reached the perfect point of sweetness and flavour—are picked to begin the journey to El Borbollón. There, the process begins with the flotation of the cherries, separating them according to their density. Those that sink are the best; those that float—having not reached the necessary ripeness—are discarded.

At El Borbollón, the selected cherries are placed on raised drying beds, where they remain for around 20 days. During this time, the cool mountain air and the shade of the coffee trees help maintain the ideal temperature for the bean to develop its most complex and flavourful characteristics. It is a process that brooks no haste. La Reforma coffee is dried slowly, as if the earth itself wanted to ensure that every bean reached its full potential.

The carefully chosen shade trees play a crucial role in this entire process. They are native species that not only protect the coffee plants from the scorching sun, but also prevent soil erosion and maintain the ecosystem’s biodiversity. On the estate, nature is not merely a picturesque backdrop: it is an ally in creating the best possible coffee.
