MAKING CHEMEX AT HOME

DETAILS AND INGREDIENTS

PREPARATION METHOD: Strained

PREPARATION TIME: 3:00 to 3:30 minutes

GRIND SIZE: Coarse (between sugar and coarse salt)

AMOUNT OF WATER: 250 ml (one cup)

AMOUNT OF COFFEE: 16 g per cup

RATIO: 1:16

COFFEE BREWED IN A CHEMEX HAS A UNIQUE FLAVOUR PROFILE. ANYONE WHO TRIES A WELL-EXECUTED CHEMEX BREW WILL COME BACK FOR MORE.

PREPARATION

1. Heat 250 ml of water (for each cup you wish to brew) to 93°C (if you don’t have a thermometer, bring the water to the boil and wait 30–40 seconds without covering it)

2. Place the Chemex filter in the holder and wet it with the hot water so that it adheres to the filter holder and reaches the correct temperature. Remove the filter and discard the water

3. Add 35 g of ground coffee to the filter, place the device on the scales and set them to 0 (Tare)

4. Start the stopwatch and pour 50 ml of water in a circular motion, ensuring all the ground coffee is moistened. Wait 30 seconds for the blooming to complete.

5. Pour a further 50 ml of water in a circular motion, drawing a spiral from the centre to the edges and from the edges back to the centre. Repeat this every 30–40 seconds until you have used 250 ml of water (per cup).

6. Allow the coffee to brew for 3 minutes and 30 seconds from the start of preparation. Do not exceed 4 minutes.

7. Enjoy a fresh, freshly brewed speciality coffee.
